Ginger Lime Shrimp

I know that it has been a couple of weeks since my last post, the truth is, I hadn't made any blog-worthy recipes. Last week was New Recipe Week, I made a new creation each night for dinner, I thought surely one of these will be postable, but no. Everything was just OK, a few recipes like the Penne with Rabbi and while beans has promise but needs a few flavorful tweaks.

The dry spell ended last night. My roommate at work told me about this recipe--Ginger Lime Shrimp. It is fast, it is delicious and it is perfect for a Spring Time Meal.

INGREDIENTS
1 lb of shrimp (fresh or frozen) I used frozen
3T of Ginger Preserves (found on the jelly aisle of your food store)
2T of chopped cilantro
1/2 lime squeezed

For the dipping sauce
Fresh horseradish
Apricot Jelly

Heat up a large saute pan and add a bit of olive oil
Saute the shrimp until they begin to turn pink
Add the Ginger Preserves (this will melt and add a shiny coat to the shrimp)
Continue to cook until all of the shrimp are done, another 2-4 minutes
Place cooked shrimp in a large bowl and toss in the cilantro and lime

Meanwhile, combine the ingredients for the dipping sauce, make it as spicy as you like!

So fast. So good. This dish would be excellent when served over a salad, rice, grilled vegetables or just about anything!
