So Fancy, So Easy Summer Pizza

This evening I hosted our semi-regular Book Club at my home. I love book club. Each month or so, five to ten of us meet at someone's house and we discuss a book that we have all read. This month it was a light summer read, Last Chance Saloon by Marian Keyes last month it was East of Eden by Steinbeck.

So that we could have some stuff to nibble on while we gabbed about our chick lit, I whipped up two super fast snacks. I made Ham and Cheddar Biscuits--these couldn't be easier. I bought Pilsbury frozen biscuits and added a sharp cheddar, brown sugar ham and honey mustard. Delish.

I also pulled together a fancy pizza/tart that was a big hit, there was only one piece left, so I ate that piece. Now there isn't any left, so you know it must be good. I used frozen puff pastry but crescent rolls would also work well. I also am fortunate to have a wonderful neighbor who supplies me with fresh zucchini from the garden--so I had the freshest and sweetest zucchini for this pizza and that truly makes a difference. INGREDIENTS
Preheat the oven to 375 degrees

1 Sheet frozen puff pastry thawed, or crescent rolls, rolled on a baking sheet pierced with a fork
3/4C light mayo
3T chopped fresh basil
1t garlic salt
1t red pepper flakes
2C chopped fresh tomato (any variety)
1 small fresh zucchini sliced
1/2C (about) sliced smoked mozzarella



On a greased baking sheet, roll out the dough and pierce with a fork

Combine the mayo, basil and garlic salt and smear on the thawed dough

Pile on the tomatoes and zucchini and top with cheese

Bake in oven until brown and bubbly, slice and serve HOT!

Yum, looks fab! i love tomatoes and zucchini both... I can imagine they'd taste good on pizza.:)

That looks so good. I have been fun coming up with pizza combos, but would never have thought to make one with puff pastry!

I love the use of a nontraditional pizza dough. How well did the pastry hold up to the ingredients? Do you think it would work for say a pineapple and sausage pizza?

Hi Nate and Annie! These ingredients held up very well because they were light...I am not sure about sausage and puff pastry. But I am sure that the crescent roll dough would do just fine! N'Joy!

I'm not good at following directions either, but it turned out well with some variations. First, I used a thick crust pizza dough instead of crescent roll dough. Second, my basil plant died, so I used rosemary and thyme. Third, I read "garlic salt" as "garlic" and "salt" in my haste to make the mayo. Fourth, I used regular mozeralla and goat cheese. It was very good though, considering the only ingredients from the original recipe were zucchini, tomato, and mayo!
